We should not encourage such centralized and identifiable (phone number) apps for private instant messaging. Alternatives that also feature VoIP / voice call: Simplex Chat, Jami, Tox (atox on android), Matrix/Element (will be better when p2p is fully implemented). Chat only: Briar.
Which one in specific? There are some packages which maintainers did not bother creating xdg desktop specification… you can look into nixpkgs source code to see if they are specified there or not.
I do not know if Debian is able to pick the desktop files though
