Not only do you get latest upstream binary versions, but building stuff is easier without the need to hunt down all dev package versions and a lot of packages have their git versions in AUR. Pull in all latest commits, build and install with just a single command!

Otherwise its just more frequent 50GB downloads for some imperceptible incremental change to CUPS and Libre Office.
