If you get arrested during a protest, they can force you to unlock the phone (it can be a felony to refuse) , so better not to bring it at all.
Completely depends on the country. In the US courts ruled it violates the 5th amendment. That could of course change but currently, no (in the US), a cop cannot force you to unlock your phone.
Better not use biometrics lol
