Thanks for the info! I think i bought a mozzarella for baking once that peeled like that. I put it into a pizza crust and it was really delicious.

Low moisture mozzarella, yep. Great for baking because it melts instead of turning into a puddle under heat.

Peanut oil is rarely the wrong answer. Canola oil is ok if you have plenty already.
Tallow will be best though. Bonus if you go that route: you can make the original recipe of McDonald’s fries but beware that you’ll be (more) ruined on the trash they sell today.
